Purple Stripe garlics

Purple Stripe garlics are ophios (hardnecks) and are usually vividly striped with purplish vertical stripes decorating the bulb wrappers, hence their name. In between the purple stripes, their bulb wrappers are usually very white and thick. Some sub-varieties are even heavily splotched with purple. Coloration is affected by growing conditions, particularly weather and sometimes they are strongly colored and at other times more white than purple.They tend to be rather rich in flavor, but not overly pungent, though some are milder, and store fairly well. Standard Purple Stripes (Chesnok Red and Persian Star) make the sweetest roasted garlic. They mature about midway through the local harvest season although the larger ones may mature later.

Bogatyr (Marbled Purple Stripe)

Bogatyr originated in Moscow and is one of the spicier garlics when raw. The flavor does not linger as long as some others, which makes it good for recipes using raw cloves, such as pesto or hummus. Fat cloves are nice for roasting with a pleasing garlic flavor. Bulbs generally contain 5-7 cloves.

   
 

Metechi (Marbled Purple Stripe)

The plants are more upright and broader leafed than others and has large bulbil capsule and bulbils. The bulbs are nicely colored and very firm. Cloves are few, but large and fat, with blushed and lined skins that are thick. Long storing. Raw it tastes fiery but ends with a pleasing finish. Averages 6 cloves per bulb.

   
 

Chesnok Red (standard purple stripe hardneck variety)

(standard purple stripe hardneck variety) aka Shvelisi This is another one that has done consistently well for us. It’s said that this is one of the best cooking garlics. It is very flavorful, having won “best baking garlic” taste tests conducted by Rodale, Sunset Magazine, Martha Stewart and others. It holds its shape and retains flavor well when cooked. It has large easy to peel cloves. At our house we've observed a fantastic storage life with this hardneck, typically lasting well through April and into May. Originally from Shvelisi, Republic of Georgia. Averages anywhere from 8 to 14 cloves per bulb depending on the size of the bulb.

   
 

Persian Star (standard purple stripe hardneck variety)

Persian Star (Standard Purple Stripe) Originally from a Samarkand, Uzbekistan bazaar in the late 1980's. This one has some vivid clove colors. The outer bulb wrapper is sometimes smooth white but the inner wrappers are purple streaked. It has red-tipped cloves with marbled streaks on a whitish or yellow-brown back ground. Eaten raw, it has a very pleasant flavor with a mild spicy zing, we really like it. It holds up well to cooking and maintains it's texture and flavor. As an odd sidenote on flavor, we found out accidentally that the flavor of this one raw combines really well with dark chocolate - strange but true. Averages 7 cloves per bulb.
